Chocolate and marshmallows are a
classic combination and always pair so well together. I found the recipe below
for chocolate marshmallow cookies and decided to make them into ice cream
cookie sandwiches. The rich chocolate flavor combined with sweet and smooth
vanilla bean ice cream was a recipe for success and they turned out delicious,

Chocolate Marshmallow Ice Cream Sandwiches
Makes: 44 cookies

Ingredients:
- 24 ounces semi-sweet chocolate (6 bars),
chopped
- 1 stick unsalted butter
- 3 large eggs
- 1 cup sugar
- 1 teaspoon vanilla
- 1½ cups flour
- ¾ teaspoon salt
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- 1½ cups mini marshmallows
- Vanilla bean ice cream
Instructions:
- Heat
oven to 350 degrees. Line 2 cookie sheets with parchment paper.
- Melt
half chocolate (12 ounces, 3 bars) and butter in a bowl, microwave on high in
30 second increments, stirring after each until melted and combined. Cool
slightly.
- Set
chocolate aside and whisk together flour, salt, baking soda and baking powder.
- Add
eggs, sugar and vanilla to chocolate mixture, whisking together until smooth.
- Slowly
add dry ingredients to the chocolate and stir until combined.
- Fold
in remaining chopped chocolate and mini marshmallows.
- Bake
for 12-15 minutes and let cool completely.
- Sandwich
together 2 cookies with a scoop of vanilla ice cream in between.
